In any event, FWIW I was taught that one syllable is apostrophe-s, three or more syllables is s-apostrophe, and two syllables can be either way (both are correct).

It's one of those shitty grammar rules. I seem to see a different rule every time I look it up. I've heard it depends on how you pronounce it. So if you pronounce two s noises, use s's.

Never heard of that clause-- it's always been based on #syllables-- but yes, it's a "shitty" grammar rule either way. ;)
I'm sure I'm missing something obvious, but when would you not pronounce two s noises in a possessive of a word ending in 's'?
